Potato & Egg Breakfast Quiche
5 cups water, divided
2 cups Augason Farms Dehydrated Potato Shreds
1 tsp salt
2 Tbsp Augason Farms Dehydrated Chopped Onions
1/4 cup Augason Farms Dehydrated Diced Red & Green Bell Peppers
2 Tbsp butter
1/2 cup cooked diced bacon
1 cup Augason Farms Freeze-Dried Shredded Colby Cheese, re-hydrated
Directions: In a 2 quart saucepan, add 4 cups water, potato shred, salt, onions, and peppers. Let simmer 10 to 15 minutes (until onions and peppers are re-hydrated). Drain well. In frying pan, add butter then add well drained potato shreds mixture. Cook until browned and crisp, about 15 minutes. While potato shreds are cooking, mix egg powder with remaining water. Stir until smooth, add bacon and cheese. Pour over browned potatoes and cook until egg mixture is set. Serves 6.

Instructions for Use
1. Remove oxygen absorber and discard.
2. Add potato shreds to boiling water.
3. Reduce heat to medium and continue cooking for 5 to 10 minutes until tender, stirring occasionally.
4. Drain excess water.
Use in recipes calling for potatoes or fry on well-oiled grill at 375°F for 3 to 4 minutes or until golden brown.
